Preparation
With this style of tea cake, the leaves are firmly compressed together. You will need either a tea knife or a sharp thin kitchen knife to loosen the leaves.
It is best to start working on the underside (or indented) side of the cake. This will help to preserve the shape.
To pry off pieces, carefully insert your knife using a sideways or lateral motion working from the centre of the cake. Gently loosen and lift a piece off. The aim is to keep as many leaves intact as possible
Note: As you cut (or push the blade) away from yourself, it is important to keep your support hand behind the point of the knife, to avoid cutting yourself.
Storage
Aged white tea is best stored away from light and in an odour-free environment.
Keep your tea cake stored in its original packaging. Good air circulation will keep your tea healthy.
Aged white tea prefers a stable temperature environment. An ideal temperature range is between 20° to 30° Celcius. Do not store tea in a refrigerator.
Excessively high or low humidity climates combined with a lack of air flow can damage the flavour and longevity of your tea cake.
